We photographed Jiko shortly after its reopening, working with chef Richie Barrow whose food is genuinely hard to look away from. The menu leans on open-flame cooking and African ingredients, and the plating has a looseness to it, confident but not fussy. We shot it that way too, letting the char, the color and the textures come through without overworking the frame. The restaurant sources from local farmers and that shows up on the plate, so it wasn't hard to find something worth photographing in every dish.
